2017 I was driving down Santa Fe thinking about the ratings Pueblo nationally about the worse place to live. I decided I needed to do something to make Pueblo people feel better. I thought it over. At the 4th and Santa Fe light I said out loud. Cheesecakes. There complicated to make and expensive. I didn't like cheesecake atbthe time. I knew I needed to create a recipe i loved in order to sell and believe in. Plus I didn't know how to male them authentically. So off to wirk I went. Trial and error cheesecakes went into trash until finally I mastered the recipe and procedures. Well not mastered still perfecting my technique. That will be on going. My story is me. I'm going to make Pueblo happy 1 Cheesecake at a time.
