Bakers by Heart began when Marianne attended a class on the benefits of using fresh-milled grains. The instructor, who has a degree in food science from the University of Georgia shared not only the science of the concept, but also her own family's experience of improved health. After in depth research, she traced the history of the decline in US health from the healthiest nation in the world in 1900, to the poorest in the year 2000.
